Recipe of the Week-- Chocolate Chip Coffee Cup Cake

My friend Lindsey follows a woman who blogs weekly about a new recipe. Recently, I found one that is absolutely amazing, AND I was inspired to do my own recipes on my blog (since, of course, I am a wife now and am in charge of feeding my husband regularly).

So here is my first recipe blog...Chocolate Chip Coffee Cup Cake.

This is one of my new favorite recipes since it is great for a chocolate craving fix AND I usually keep all the ingredients in my house at all times.

Here is the recipe:

4 T flour
5 T sugar
2 T cocoa
1 egg
3 T milk
3 T oil
~3-4 T of chocolate chips (optional, but much better when added)
Small dash of vanilla extract
Large coffee mug

Add the flour, sugar and cocoa together in a large coffee mug and mix well. Then add the egg and mix well. Pour in oil and milk and mix well again. Add the chocolate chips if you are using them, and then add the vanilla. Mix all of it up thoroughly in the coffee mug, and place in the microwave on 1000 watts for 3 minutes. Place a paper towel under the mug in case the mix should spill over, and it's ok if it does.
After it cooks in the microwave, turn the mug upside down on top of a plate. Garnish with ice cream or whipped cream (or my favorite, Lite Cool Whip). ENJOY!!!
