i'm still cooking...

I'm still cooking with the Pioneer Woman..

I just haven't had time to blog about it.

Since I last posted about what I'd been cooking from the Pioneer Woman's Cookbook, this is what I've made: (I am going to apologize, there are no pictures, but if you want a recipe, please email me or leave a comment. I added two of PW's photos to spice things up a bit!)

-Artichoke Dip (three times): Mat and I both LOVE LOVE LOVE this recipe. It's so easy and so good. We recently acquired a panini press, and this stuff makes wonderful spread for our hot paninis.

-Cinnamon Rolls (twice): The first time I made these was around 11 p.m. the night of the closing ceremonies of the Winter Olympics. I was so depressed the Olympics were over. MAJOR pain to make, but really good. It makes a TON of cinnamon rolls, too. I halved the recipe the second time. They are so good. (PW's recipe here.)

-French Breakfast Puffs: These were a huge hit at a Sunday School breakfast. Everyone loved them!

-Chili: Her chili was good, and I consider PW a much better cook than me, but I have to say, my chili is so much better than hers. I think they are just different-- my chili is good, Southern chili, and her's is Southwestern chili. I was not a fan.

-Cornbread: Pretty good. Time consuming, but pretty good. No where near as good as my Mimi's.

-Macaroni and Cheese: AMAZING. Mat's favorite. I cook it in my Dutch oven, and it's so stinkin' good. You bake it and add a layer of cheese on top. Really, really good. (PW's recipe here.)

-Red Velvet Cake: The first time I made it, I was going to make a layer cake, but I simply CANNOT make a layer cake, so I had to throw out 2 1/2 out of 3 layers (they broke and crumbled). The second time I made it, I made it in a 9x12 Pyrex dish. It was good, but again, not my favorite.

I'm so glad I bought PW's cookbook. It is now my staple cookbook, and we cook from it almost weekly.

Ok, weekly. We cook from it WEEKLY!

  1. I heard the creamed spinach is really good but haven't tried it yet.
